I have a hard time NOT pairing WIAW posts with something unrelated to food. Lately I have done links of recent finds with my WIAW post, however today will be the exception. I just have so much to say about some of my recent eats!
Breakfast: Eggs with Mushrooms, pita with peanut flour, fruit, greek yogurt with cheerios
It was almost two years ago that I briefly posted about my snack of cheerios that have been sitting in greek yogurt. I am still perplexed at how perfectly the greek yogurt moistens the cheerios and becomes super thick. It is like a science experiment in my breakfast bowl. I can practically see the exchange of liquid between the two mediums (yogurt and cheerio)
Cran-Peach Oatbran: 1/3 cup oatbran, 1/3 cup egg whites, 1 tbsp coconut flour, 1 tbsp peanut flour, 1/4 cup pumpkin, 1 cup cold peach tea. Overnight then mixed with peaches and cranberries
This is one of the first bowls of oatbran I have had since going through a stage where I just wasn’t craving it in the slightest. I don’t think it is possible for me to ever get tired of cranberries, oatbran on the other hand comes and goes.
Snack: Microwave cinnamon saucer. With a ‘can’t decide’ topping: One cream cheese, one peanut flour spread
Cinnamon peanut flour spread and cream cheese always like to battle each other in my mind. Those are the two toppings which I can never decide between! Usually I just have both. Makes the prep twice as long, but the enjoyment magnitudes larger.
Dinner: Veggies, tuna, lima beans, and marmite dip.
I have mentioned previously that I like marmite, and one of my favourite ways to use it is by creating a dip for my veggies. The best part is: it is incredibly easy!
•1/2 tsp marmite
|•1/3 cup greek yogurt||
1)Mix both ingredients together (in which ever order you please)
|There are two ingredients, it couldn’t get much more convenience. The only nuisance is that marmite is sticky and you kind of have to use two spoons to get it all mixed (or your finger).||

For a thicker creamier version I have added a tablespoon of cream cheese.
