Thank you so much for the comments on yesterdays post, I appreciated them so much and they made me feel a lot more confident in listening to my body even when my family’s eating habits are frustrating.

Last night when packing my lunch for today, I sought out to recreate a creation from the recent past. And by ‘recent’ past I mean two days ago. Yes, my meals do get really repetitive.

A jar? Yes, a jar full of yuminess.

Cranberries? Of course, but that’s not all.

Hemp seeds? Yes, but the best part was the stuff underneath those seeds.

Each spoonful was like eating a rich velvety flavor burst. 

A duck? No, a Post-it Note with a duck on it. I am obsessed with Post-it notes, I have them in all sorts of colors, and shapes, but back to that jar I was talking about.

Perhaps by now you may actually be wondering what this mushy peachy colored fluff is that I am clearly very found of.

  • 1/4 cup of greek yogurt
  • 1/2 cup Yoplait Source Cherry Yogurt
  • 1/3 cup canned pumpkin
  • sweetener (I used 1 stevia packet), and unsweetened cocoa powder
All the above ingredients are mixed thoroughly then add
  • 1 cup puffed kamut
And mix thoroughly. Then the last ingredient:
  • 1 tbsp Chia Seeds
And of course, you must mix the chia seeds thoroughly into the whole concoction too. I told you I was a fan of these little magic seeds. Then I put it in the fridge overnight, so it would be quick and fast to grab on my way out the door. Last night when I went to pack my lunch for today I used the greek yogurt container, because it was near empty and we all love having one less dish to clean right?
I also topped my Tub of Tastiness with hemp seeds and almonds because I always like a little crunch on top of mushy foods. Almonds are with out a doubt my favorite type of nut. I love their crunch, taste and texture.
Since I’ll be eating this at work, I won’t be able to take photos. If it’s as good as the last time though, it will be yummy! As an aside: yesterday I tried hummus for the first time. I have been missing out… hummus is beyond amazing! It was just one of those things that my parents never had growing up so never bought when doing groceries. I also had never been inclined to buy it, but the other day I found hummus lunch packs in handy prepackaged portion sizes which I thought would be super convenient for taking to work. Hummus will be on my grocery list from this day forward.
