If you were given the challenge to create a strawberry cream baked good what would be some of the ingredients that came to mind for creating a “creamy” taste? Mine include: cream cheese, greek yogurt, dairy cream, and sour cream. Yet in this circumstance I didn’t use any of the above mentioned ingredients.

Nope, I wanted to continue to experiment with Lupin flour since I was so happy with how my cheddar flax muffins turned out (am I allowed to express contentment at my own creation?)

After investigating lupin flour a little further than the basics of this post I discovered that technologists believe lupin flour could potential be used in foods such as ice cream, cream desserts, mayonnaise and dressings (source).

This isn’t just a far away potential as researchers have already made an ice-cream from lupin proteins and canola oil. The benefit of this is that lupin has a well balanced proportion of omega-3 and omega-6 fatty acids and cholesterol lowering protein (source).

strawberries n’ cream pancakes

Ingredients: Instructions
•2 tbsp unsweetened whey protein powder
•1 tbsp coconut flour
•2 tbsp lupin flour
•1/2 cup canned pumpkin
•1/4 cup cold Milk Oolong
•1/4 cup coconut milk
•1/4 cup egg whites
•1/4 tsp stevia (or sweetener of choice)
•1/4 tsp baking powder
•1/4 tsp baking soda
•1 tbsp apple cider vinegar
•Capella Stawberries and Cream Flavour drops

1)Mix all dry ingredients

2)Add pumpkin mix well

3)Add egg whites, mix. Add other liquids (except ACV) mix. 

4)Add apple cider vinegar and mix immediately before pouring onto frying pan.

I topped my stacks of pancakes with peanut flour syrup and sliced strawberries.

You better believe that the yogurt from my side of fruit ended up all over these pancakes! My meals always become a deconstructed mess after the photos are snapped.
