Over the past year and a half savoury pancakes have become my go-to meal for not only dinner, but also breakfast. I always have at least some sweet at breakfast (grapefruit), so sometimes pairing it with another sweet item (ie: oats) leaves me unsatisfied.
mini bread bites

•1 tbsp pea fibre
•1 tbsp coconut flour
•1/4 cup egg whites
•1/4 cup chopped mushrooms
•dash of salt
•garlic powder, italian seasoning, rosemary
•1/4 tsp baking soda
•1/4 tsp baking powder
•3 tbsp chicken soup broth
•1 tbsp apple cider vinegar
1)Mix all dry ingredients. Add greek yogurt, mix well.
2)Add egg whites and almond milk, mix well.
3)Add mashed steamed cauliflower, mix well.
4)Add Apple cider vinegar, mix well. Let sit for at least 1 minutes
5) Pan-cake making time
|These cook up real fast. There are quite a few ingredients which make the prep time marginally longer.||
The recipe makes 5 thick cakes. The whole recipe is ~160cal (16 g carbs/1 g fat/ 22 g protein)
The hint of rosemary is the perfect addition. I probably put in a bit more then a dash of salt and you might want to too.
The texture of this pancake is very bread like (hence the name).
General Comments: I like topping these with cucumber and tomato.
Topped with tzatziki, cucumber, and tomato.
I always start my breakfast at home and finish at work. I hate being rushed during my favourite meal of the day!
