I am a microwave addict. Perhaps it is because I am most often just cooking for myself and find single serving edibles more rewarding when you don’t have to wait for the oven to pre-heat. Or perhaps it is because I have realized that microwaving does not always create less satisfying food than oven baking.

Kamut Cornbread

Kamut Corn bread topped with Smoked Salmon Cream Cheese


Microwavable Kamut Cornbread

Ingredients: Instructions
•2 tbsp kamut flour

•2 tbsp corn meal (I used course)

•1/2 tbsp coconut flour

•1 tbsp unsweetened whey

•1/4 tsp baking soda

•1/4 tsp baking powder

•1/4 tsp cream of tartar

•1 tbsp cream cheese•1/3 cup egg whites

•1/4 cup almond milk

•salt, garlic, cumin, chili powder

1)Mix all dry ingredients, then add cream cheese and mix.

2)Add in egg whites and mix well (I use a mini hand beater)

3)Microwave 3 min.

4) Flip, and microwave another 1.5 minutes on a lower setting

5) Cut, and eat! (I have toasted it at this point, which is excellent!)

You can make this recipe really fast, probably within 10 minutes.




This recipe makes a pretty large single serving, so you can split it in two if you aren’t too hungry. Nutrition stats will depend on your protein powder, and cream cheese but it will be around: 25g carbs, 18g protein, and 7g of fat.


I wouldn’t have this without topping it with something or dunking it in soup, because I didn’t add tonnes of spices or flavouring.


The texture is my favourite part of this recipe. It is very bread like, and has a nice crunch to it because of the course ground cornmeal
General Comments:
I have made this exact same recipe using vanilla protein powder, and cinnamon instead of the spices and got a sweet type cornbread. It was very good too!



Thick and Crunchy. Very bread like.
