It has been a while since I have posted a recipe. Who am I kidding, it has been a while since I have posted period. I’m looking forward to sharing this recipe for microwave cookies because it brings up the perfect opportunity to give a little update on none other than: myself.
I always find it difficult to write about me. Most of the sentences I write get crossed out (or shall we say backspaced) because I figure no one would want to read it anyway, however today I am going to talk about MY changing taste buds.
You will notice in this recipe the added line of “1g package of stevia” which goes against what I have previously written about on my blog and sometimes in my comments on other blogs.
Microwave Chocolate Cookies
•1 tbsp whey protein powder
•1 tbsp unsweetened cocoa powder
•2 tbsp cartoned egg whites (or the whites of one egg)
•5-6 drops of Capella Marshmallow Flavour drops
|•1/4 tsp baking soda
•1g package of stevia (optional)
•1 tbsp coconut flour
•1/3 cup pumpkin puree
1)Mix all dry ingredients in bowl
2)Add pumpkin and egg whites. Stir well.
3)Spoon onto large plate and microwave for 4 minutes
4)Flip and microwave for 2 more minutes.
5)Cool and top with toppings of choice
|Convenient if you don’t want to bake up a whole batch of cookies and wait for the oven to heat up and do it’s thing. However if you do this on a daily basis you will realize it is a whole lot of effort for a single serving (but most single serving recipes are that way)||
|We have all heard the benefits of coconut flour (fibre) and have been bombarded with the pros of protein. These cookies are approx: 100cal (10g carbs, 1g fat, 17g protein)|
|These cookies aren’t too sweet (depending on if you add sweetener). I find that the pumpkin and coconut flour naturally sweeten them well which allows the cocoa powder to still stand out.|
|Cookies come in so many textures. These ones are more on the soft side. My favourite cookie texture is chewy (not crunchy)|
The entire recipe makes 5 medium sized cookies.
The past 2.5 years or so I had almost completely avoided false sweeteners in my recipes and had trained my taste buds to enjoy unsweetened things. Many of recipes were savoury like the corn bread or rosemary breakfast biscuits. The recipes that weren’t savoury like the chocolate swirl cookies never had stevia added to them but were only lightly sweetened by the very little protein powder in them.
Over the past 4-5 months I have managed to undo this independence from sweeteners. I have had an unfamiliar craving for sweeter baked (or microwaved in this case) goods. As I have given in to it my taste buds have slowly become acclimatized to sweeter foods.
Despite having a hard time talking about myself I wanted to write about this change in cravings and tastes because I’m sure that others can relate. Everyone goes through phases when they can’t get enough of something.
For now, these microwave cookies do just the trick for satisfying my cravings.
