My world is finally starting to transform into the colorful spring scenes I can’t help but immerse myself in. More and more I find myself itching to get outside. Whether I am venturing out to explore a new area of the city or just going to run a quick errand I always like to have a quick snack to take on the go.

These lemon lime muffins are my current pack and go snack and the light citrus flavor is perfect for keeping my spring spirits high.

I normally get from place to place by foot and am almost always listening to music or an audio book during the winter. In the spring, when the birds are tweeting, I often forgo the audio and listen to the birds.

lemon lime muffins

Ingredients: Instructions
•1.5 cup vanilla whey protein powder

•1/4 cup golden flax seed

•1/4 cup oat fibre
•1/4 cup peanut flour
•1/2 cup canned pumpkin
•1/2 grated zucchini
•1 cup well steeped lemongrass tea
•1 tsp xanthan gum
1 tbsp lime zest
•1/2 cup egg whites
1 tbsp coconut oil
•1 tsp baking soda
•1 tsp baking powder
•1-2 tsp stevia
•pinch of salt
•1 tsp lemon extract

1)Mix dry ingredients.

2)Add in melted coconut oil and mix lightly.

3)Add grated zucchini, egg whites, and pumpkin. Mix well.

4)Add cooled tea and remaining ingredients. Beat on high for at least 3 minutes

5)Bake 35 min in 375 deg F oven

I find grating and zesting (if that isn’t a word, it should be) to be an extremely inconvenient step. Hence the below average grade.




The nutrition per muffin~ 75 cal (3 g carbs/3 g fat/ 11 g protein). A great high protein snack to go.


I’m normally not the biggest fan of fruit flavoured muffins or desserts. I prefer the nutty or chocolate type, however I find these very refreshing.


When something is called a muffin you expect a certain texture, however these break that stereotype. They aren’t dense or crumbly but more light and airy.
General Comments:
Recipe Makes 12 muffins.

The green flecks are not only from the grated lime zest, but also from the grated zucchini! I really enjoyed these topped with cream cheese. There is just something about that combination.

These muffins easily made their way in to my daily eats. I haven’t participated in a WIAW post recently but I want to join in this week with how I incorporated these muffins into my meals:
