I’ve been much more absent from blogging than intended this month. It’s not that I haven’t had a few things to share…

…it’s just that I have been a little preoccupied…

I took on the tasking of building myself a new computer, which has proven to be highly effective at taking up my free time. Not without providing a significant reward, seeing as I am now the proud owner of a powerful computer with a great graphics card. I even got it dual booting Mac and Linux (I try to forget that I am still troubleshooting wifi network issues) but those details may be a bit too engineering nerdy for my general readers, so on with the recipe!

green lentil & tomato casserole

Ingredients: Instructions
•1 cup green lentils

•1/2 cup bulgur

•1.5 cups canned tomatoes
•1/2 cup water
•1 cup tomato juice (can substitute with water)
•3 celery stalks chopped
•1 tsp rosemary
•1 tsp italian seasoning
•1 tsp sage
•1/2 tsp salt
•1 tsp garlic

1)Rinse lentils and add to slow cooker

2)Add all other ingredients to slower cooker except for the bulgur

3)Turn slow cooker on high for 3 hours.

4)Add bulgur, turn slow cooker to low for 2 hours.

I love how fast this recipe can be prepared. I can honestly put everything together in 6 minutes and leave my slow cooker to do the hard part.




The stats per serving are approximately: 275 cal (47g carb, 1g fat, 15g protein).


I think lentils are my new best friends. I never realized how fantastic they tasted.


I have never been a huge fan of mushy foods (hence why you don’t see much rice around this blog), yet I still found this texture oddly satisfying.
General Comments:
Recipe Makes 4 servings. I kept mine in the fridge for a full week and took out servings when I was in a rush.

This recipe was perfect for grabbing on the go when I’ve been so busy with other projects.

A few too many late nights hunched over my computer trying to figure out what was wrong with my motherboard were easily remedied by knowing I had the next day’s lunch already prepared.

I can’t believe I have waiting so long to enter a relationship with lentils.
