With the onslaught of healthy living blogs popping up it has become even more difficult to post something original. Especially in a case like today when I want to share a quinoa recipe.
Is there really anything I can share about quinoa that you don’t already know about?
I don’t think so. I can’t even post links because everyone is capable of searching ‘health benefits of quinoa’ into a google search bar (because who really uses any other search engine). That is why today’s post is going to be short and sweet. Or not really sweet since this recipe is for a nuttified quinoa dish, but I am sure you catch my drift.
Extra Nutty Quinoa
•1/4 cup black quinoa
•3/4 cup chicken broth
•1 tbsp peanut flour
|•1/2 cup frozen peas
•salt and garlic to taste
|1)Rinse quinoa. Add quinoa, chicken broth, salt and garlic to a pot and heat on medium heat.
2)Let cook (~15 minutes).
3)When liquid has mostly been absorbed add mushrooms and frozen peas. The frozen peas will add more moisture.
4)Add the peanut flour and remove from heat. The peanut flour should absorb the extra liquid from the melted frozen peas
|All done in one pot, and within ~20-25 minutes||

In the past I haven’t been a big fan of quinoa but I surprised myself and really enjoyed this dish. I like the way the peanut flour made the texture more sticky than normal.
