Healthy and Pretty Peanut Chocolate Swirls!

I have experimented with this recipe several times until I found something that worked for creating a deliciously healthy and picturesque mini cookie.

Chocolate Peanut Swirl Cookies

Ingredients: Instructions
•1/2 cup peanut flour

•1/4 casein protein powder

•1/2 cup unsweetened cocoa powder

•1/4 cup coconut flour

•1/4 cup +1 tbsp almond flour

•1/2 tsp baking soda

•1 tsp baking powder

•1/4 tsp cream of tar tar

•1 tsp vanilla extract

•dash of salt

•3/4 cup egg whites

•1 cup almond milk or cold Forever Nuts tea

•1 can pumpkin purree (374ml)

•1/4 tbsp cinnamon plum green tea

1)Preheat oven to 325deg F. Beat egg whites and cream of tar tar on high for approx 5 minutes

2)Mix dry ingredients then add into whipped egg whites

3)While mixing add the can of pumpkin, once thoroughly mixed add the cup of liquid.

4)Put mixture into a large plastic bag and cut off tip (essentially creating a piping bag).

5)Squeeze the mixture into spirals on a cookie sheet and bake for approx 35min.

The ingredients are pretty common for health baking so you shouldn’t have a hard time finding any of them. The piping surprisingly made these cookies easier to make then when I was attempting to spoon them onto the the cookie tray.




I wanted to make bite sized cookies, so I made these small, but each cookies is only 17 calories! The ratios are: 1g carb/1g fat/1g protein


These cookies have a slightly brownie-like taste to them in that they are really fudgey. They are not overly sweet as the only thing sweetening them is the protein powder. For some reason they remind me of two bite brownies in cookie form.


Soft and moist but still something to chew on. Let them cool off thoroughly before putting them in the fridge or they get a little sticky.
General Comments:
This recipe makes 50 bite sized cookies.
Engineering Explained:
The baking time is slightly longer because I didn’t want to spoil the healthy fats in the almond flour, which have a lower smoke point then other fats such as coconut oil.Adding the cream of tar tar to the egg whites in step 1 helps with making them stiff.
