I love how more and more WIAW posts are going back to the way things used to be and posting a full day of eats (like this one or that one) I remember when I first started WIAW I would do anything possible to snap a photo of everything that was consumed in a day and it would be so much fun to post.
Unfortunately I haven’t managed to do it again, so this is another borderline WIAW. In other words the meals are more a compilation of recent typical eats that I have been enjoying. Fortunately this means that pancakes are involved and a recipe!
I reserve my pancake breakfasts for Saturdays because I like to take my time enjoying them.
Peanut Pancakes – with wild blueberries
•2 tbsp vanilla protein powder (I used this one)
•1 tbsp coconut flour
•2 tbsp peanut flour
•1/4 cup canned pumpkin
•1/4 cold ForeverNuts David’s tea
•1/4 cup almond milk
•1/4 cup egg whites
•1/4 tsp baking powder
•1/4 tsp baking soda
•1 tbsp apple cider vinegar
•Capella Peanut flavour drops
•1/4 cup frozen wild blueberries
1)Mix all dry ingredients
2)Add pumpkin mix well
3)Add egg whites, mix. Add other liquids (except ACV) mix. Add frozen blueberries and mix.
4)Add apple cider vinegar and mix immediately before pouring onto frying pan.

I really love the added flavour from the Peanut Flavour drops and the Forever Nuts tea.
These pancakes are moist and dense.
Makes a 9 small pancakes
Be careful with adding the frozen blueberries: Most of the time I just eyeball it but if you add much more than 1/4 cup they won’t cook easily and you will have flipping issues (trust me, I know from experience).
But this wouldn’t be even a borderline WIAW post if I didn’t post some other typical eats. So here it goes:
How many times have you seen turnip on my plate? I the last three WIAW all had turnip in some way. Clearly it is a favourite.
Lately I have been loving eggs cooked with peas. It’s super fast: 1/4 cup egg whites, 1 egg, salt, rosemary, italian seasoning, 1/4 cup peas. All mixed together, poured on a pan, and covered. It takes about 2 minutes each side.
