Lately I haven’t been participating in WIAW because of mainly posting recipes and not taking pictures of every meal for a day. But with this whole “healthy holiday recipe” theme going on this month I figured I would join in!
Although breakfast isn’t the highlight of Holiday recipes, it is still rather important to be able to wake up to something delicious and nutritious.
Breakfast Oatmeal Cookies
These cookies are full of healthy ingredients that will keep you feeling energized for all the holiday festivities.
Almond Blueberry Breakfast Cookies
•1 + 3/4 cup large flake oats
•1/2 casein protein powder
•1/4 cup almond flour
•1/4 cup psyllium husk
•1/4 cup flax seed
•1/2 almond butter (or 1/4 cup yogurt + 1/4 cup almond butter)
•1/4 cup +1 tbsp almond flour
•1/4 cup corn starch
•1/4 tsp stevia
|•1 tsp vanilla extract•1/2 cup egg whites•1 cup liquid (milk, almond milk, or cold tea)•2 tbsp chia seeds
•1/2 cup dried blueberries
•1/4 slivered almonds
•1/2 tsp baking soda
•1/2 tsp baking powder
1)Preheat oven to 350deg F. Mix all dry ingredients
2)Add in almond butter, chia seeds mix well.
3)Add in liquids stirring well in between.4)Add dried blueberries and slivered almonds last.
5)Spoon on to cookie tray and bake for 15-20min
|Practically every ingredient you could want in a breakfast is in this cookie. Depending on how you look at it this could be convenient or convenient. Either way this recipes makes around 18 cookies, so then you are saving time for rushed mornings later down the road.||
|I don’t have the exact breakdown of stats for this recipe as it will depend on the size of your cookies. For 1 cookie out of a batch of 18 cookies you are looking at a rough breakdown of 6g fat/6g protein/12g carbs|
|If you mistake these for a dessert you may be surprised as these are a breakfast cookie. They are deliciously tasty, but not overly sweet (of course you could always add more sweetener if desired).|
|The batter is really thick which results in a thick cookie that has a slightly crumbly texture, yet still sometimes with a bit of chew factor. Hopefully that description makes sense.|
This recipe makes 18 large and thick sized cookies.
Almonds and blueberries make a rather delicious nut-fruit pairing. Perhaps my favourite, or maybe apples-peanut butter is a better pairing. Hmm…can’t decide. Let’s leave it as a tie!
