What is one to do when they have a craving for fajitas but no wraps or cheese? Improvise, with fajita pancakes!
Fiesta Fajita Protein Pancake
|•2 tbsp corn meal (I used course)•1 tbsp coconut flour•2 tbsp unsweetened whey
•1/4 tsp baking soda
•1/4 tsp baking powder
|•1 tbsp apple cider vinegar•2 tbsp salsa•1/4 cup finely chopped green and red peppers
•1/4 cup egg whites
•1 tbsp almond milk
•salt, garlic, fajita seasoning
|1)Mix all dry ingredients.2)Add egg whites. Mix3)Add salsa, almond milk, and peppers mix well.
4)Add apple cider vinegar. Mix well
5) Start making them pancakes!
|These pancakes cook of very quick. The only somewhat time consuming task in chopping the peppers||

|These were very tasty topped with salsa and sourcream (or greek yogurt). Basically it taste like fajita in pancake form|
