Peanut Butter & Banana Oven Pancakes

Edible Ingredients
- 5 tbsp (same as 1/4 cup + 1 tbsp) of flour *See Note 1
- ½ teaspoon cinnamon
- pinch of salt
- ½ teaspoon baking powder
- sweetener (I used 3 packets of stevia)
- ¼ cup liquid **See Note 2
- ¼ cup egg whites
- ⅓ cup canned pumpkin
*Note 1:I used 3 tbsp hemp protein powder, and 2 tbsp of Kamut flour. The hemp protein powder makes everything dark, hence why the pancakes look like the color of chicory root.
** Note 2: I used ¼ cup of cold brewed cinnamon chai tea and ⅛ tsp of coconut oil. Instead you could use ¼ cup of almond breeze

Engineering Instructions
- Pre-heat oven to 420 F
- Mix dry ingredients
- Add wet ingredients, and mix
- Spread in a (sprayed) baking dish. The dish should be large enough so that the mixture can be spread thin.
- Bake for 15 minutes, or until passes toothpick test
What no banana is banana peanut butter oven pancakes?! That’s only because I didn’t have any banana’s in the house, so I opted for the extract. Feel free to try subbing the canned pumpkin for mashed banana though.

The first great thing about this oven pancake recipe is that they’re packed with 18 grams of protein (and the peanut flour sauce will add another 8 to that)! The second great thing about this oven pancake recipe? You don’t have to clean the frying pan! Sure there is still the baking dish to deal with, but the frying pan is my least favorite thing to clean!

ARG! I dislike cleaning all big dishes! Frying pans and baking dishes included hehe. My sink is so small and so is the area around it, darn tiny apartment kitchen! I would wash the pan for these though…wow! What an awesome recipe sarah!! & reading the comment above me made me remember I hate cleaning our george foreman most of ALL!!!

I’ve had some pretty disastrous pancake flipping attempts too, but it’s even worse when I try to make crepes. Eeep. Very clever to bake them instead
When it comes to cleaning, I think I’d have to say that I dislike the blender the most, especially when it’s something thick and sticky. Ugh. And trying to scrape all the goodness out of the bottom of the blender is a pain in the butt as well. I think that’s why I usually just use my Magic Bullet. So much easier to clean

I really dislike cleaning the food processor and the coffee machine because each has about 5 separate pieces that need to be cleaned.
I’ve tried hemp protein powder once, but it tasted too much like greens to me. I typically use Sunwarrior (brown rice protein) or Whole Foods Soy protein powder
I actually love burnt pancakes… but I’m too impatient to burn them! I love the idea of baking them in the oven though. You could do it on a cookie sheet maybe so you could make little circles more like pancakes, or even fun shapes!! I’ve gotten much better at pancake flipping, but I like waffles best!

18g of protein?? EPIC! I can’t say I’ve tried ovening the pancakes cuz I’m a pretty decent flipper, but this looks like a lot less…constant attention needed which is good for me haha.
I hate cleaning the bathroom. Its the first thing I notice/get grossed out by when it gets dirty though! blech.
oohh this is a fabulous solution! i love making pancakes but always get a bit over zealous on the mashed bananas and cottage cheese ( i love them- so i want them in my pancakes) and then they don’t flip so well!

I am so with you on cleaning pans…I hate it! Sometimes (when I’m feeling particularly lazy), I will literally plan my meals around what dishes I can make without using a pot or pan. Everything else can go in my dishwasher.
I really need to buy some peanut flour. I keep seeing “peanut flour sauce” on various blogs. Yours looks delishhh. Peanut sauce is one of my favorite things ever. I’ve just never made it with peanut flour!
This looks like the perfect breakfast to throw together the night before and make for a quickie in the morning. I’ve never used hemp protein powder, but I wonder if it would work with whey?
I hate cleaning cookie sheets! I don’t understand why my roommates can’t use parchment paper…cleaning all of the dried cookie off of them is a painn!
It may work with Whey! Hemp powder had fat content though, which makes the pancakes really moist, I don’t know if whey would do that since it’s fat free. Let me know if you try it out though

I hate cleaning spatulas for some reason! I just find that so much gets stuck in the little slats (not sure if that’s even a word!) and it’s hard to get out.
I LOVE how the recipe doesn’t require you to use pans. I suck at making things on frying pans. Eggs, pancakes, socca whatever – they all turn out scrambled no matter how much oil & liquid I add
