Summer is one of my favorite times to get creative in the kitchen. Mostly because of all the fresh produce! However salads can get a little boring if you don’t change up the contents every once in a while. The boring old: lettuce, cucumber, and tomato thing just doesn’t cut it. So I looked in the fridge to try and find something I wouldn’t normally put in a salad, and what did I pull out: Broccoli Slaw! I’m sure you have seen it in your local grocery store, and you may indeed already use it in your salads, however I’m using my brocolli slaw in a stir fry.

Next stop was the pantry, I swear there are cans of things in the pantry that you don’t even realize you have. Take for instance the can of Beets I found. I was sure beets could come in handy for making a salad, so I set to work in assembly:

Here is what went in:
-1/2 cucumber
-1 diced tomato
-5 diced mushrooms
-1/2 can of beets
-1/2 a bag of broccoli slaw

Then I mixed in 1/2 cup greek yogurt, 2 tbsp hummus, and salsa. With my hands fork and knife…

It was such a great change from my usual salads, but you may be wondering what I had with it…

You see I was just going to have egg/toast/salsa, but then I was wanting to mix it up a bit to give my tastebuds a bit of excitement. So I added pineapple, and cinnamon!

Unfortunatly this was the end of the pineapple, but I’ll be having this again as soon as I get my hands on another pineapple.

I have request: I want to bake my Dad some breakfast cookies, but I don’t have a recipe in mind. He won’t eat it for breakfast if it has butter or shortening but he always says he wants a healthy ‘cookie’ type thing he can have for breakfast on the go (he leaves really early for work). Anyways please share any recipe’s you know

I actually go through the opposite thing in the summer… all my creativity flies out the window and I don’t want to spend much time in the kitchen at all lol. That being said, I’ve pretty much been eating the same, tried-and-true recipes. I’m hoping my creativity will come back some time soon. I mean, I don’t mind sticking to things I love, but it’d be nice to get a little more variety in there too, ya know?

They have a kind of peanut buttery taste, and they’ve got tofu in them as kind of the substitute for butter or whatever. You could also find a decent recipe for home-made granola bars… sounds like he’s looking for something travel-able, not necessarily something exactly like a cookie.
ahhh my love for cooking dies down in the summer. It’s so hot to turn on the oven but I love some of the cold salads I could be coming up with! I’ve recently been playing with some overnight oats experiments to change it up!
Google the recipe for supercharge me cookies. They are so healthy and so delicious, they would make perfect breakfast cookies!!
Okay, your meals are always so creative. i love the idea of adding pineapple to your eggs/salsa/toast! sweet and salty is the best! I also have a big bag of broccoli slaw that I had no idea what to do with. I think a stirfry is an awesome idea! I was going to make coleslaw, but stir fry sounds way more fun
plus I want to try shirataki noodles in a stir fry like you did. I have them on hand too!
Your salads look delicious! I always have a hard time convincing myself to make/eat salad, ’cause I can only think of the boring/traditional stuff. What kind of salsa are you using? It looks interesting. And I LOVE breakfast cookies! I make banana-oatmeal breakfast cookies fairly often, but I don’t really use a recipe. That’s not very helpful, is it? I know there are a lot of recipes around the blog world for baked oatmeal–which comes out cookie/cake-like, might meet your dad’s needs, I’d say give it a search and see.

Broccoli slaw is so good! You should also try bagged cabbage coleslaw mix if you havent; it’s right in the same area as the broccoli slaw and is super delicious!
Love your stir fry! I have a hard time mixing it up with my foods too sometimes. Especailly breakfast. But I enjoy my breakfast ruts

Any cookie recipes in Eat Drink and Be Vegan are great, especially the Lemon Poppyseed or Oatmeal Raisin! =)
I mix up oats, cinnamon, egg whites, dark chocolate chips, baking powder and nuke it in the microwave. I know Fitnessista has some good breakfast cookie recipes you could try!

I love mixing it up! Summer is totally the best time, especially since there is no school.. (except that I’m taking a physics course by correspondence. I know your an engineer and all so I won’t insult your subject, but AHH).
For the breakfast cookie, try adding applesauce instead of butter and substituting wheat flour for a mix of almond and coconut flour.

Well, you know you can substitute butter with applesauce, pumpkin, oils, nut butter, banana (although banana sometimes gives cookies a funky taste) and many other things. They’ll still taste really good! You should try my cinnamon cookie recipe or oatmeal cookie recipe, but replace the butter with something else. I put a list of recommended substitutions next to the butter in these.
